maple-soy glazed salmon with mango salsa

I made this for dinner the other night before I went out with some girlfriends to see "Babies" (in love with this movie by the way). Over frozen yogurt we got on the topic of making dinner and I mentioned that I had made this for dinner. My friends teased me for making such gourmet meals for my husband (he is really lucky) but secretly I was laughing because it only sounds really gourmet! Anyone could make this. Yes, even you!
Maple-Soy Glazed Salmon
1 pound salmon fillet, skinned
1/2 cup real maple syrup
1/4 cup soy sauce
salt and pepper

Preheat oven to 500 degrees. Pat salmon dry with paper towels and place on a baking sheet. Season with salt and pepper. In a small saucepan, combine maple syrup and soy sauce over medium high heat and stir until dissolved and syrupy (about 5 minutes). Put salmon in the oven and let cook for 3 - 4 minutes. Remove the salmon from oven and, using a pastry brush, coat with the maple-soy glaze. Return to the oven and let cook for another 4 - 5 minutes and coat with another layer of the glaze. Let cook until no longer translucent (about 10 - 12 minutes total). Extra sauce can be served over rice or glazed again over the salmon.

Mango Salsa
2 cups mango, diced (if you don't know how to cut a mango this video is helpful)
1/2 cup red bell pepper, diced
2 green onions, diced
1/2 bunch cilantro, chopped
1 lime, juiced
2 teaspoons olive oil
salt and pepper

Combine all ingredients in a small bowl and let marinate in the fridge until ready to serve (can be made up to six hours ahead).

Cilantro Lime Rice
No recipe for this to be honest. I just made long-grain white rice using chicken broth and after it was cooked I stirred in a pat of butter, salt and pepper, a handful of chopped cilantro and the juice of one lime.

You inspire me to be a little more creative and intentional about meal preparation for my husband, who though often absent (medical school and now residency) thoroughly enjoys a good meal. We're moving back to Alaska for residency and I am ALWAYS looking for a new way to prepare fresh salmon!

    BTW- My husband was the benefactor of yesterday's hot fudge sundaes as my daughter made it (and it apparently turned out wonderful!) and took it to my husband at the church!! He was thrilled. He sure is benefiting from your blog! :D

  6. Is that mango salsa good with chips? I need something to make for our Bluewater reunion this week. I'm supposed to bring something sweet and something salty for everyone to snack on. I'm a little late trying to figure all this out. Any suggestions?
